Tasty and Nutritious

Variety is always a good thing, especially when it's nutritious too. The tasty selections this month will go a long way in satisfying your hunger and providing nutrition too. Give each one of them a try and share them with your friends and family.

The Recipe Exchange   Card   55 
Ingredients:
  • 1-lb sausage or bacon, crumbled
  • 4 Hash brown patties, frozen
  • 6 oz. cheddar cheese, grated
  • 6 eggs
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon dry mustard
Directions:
Line bottom of an 8" x 8" baking dish with frozen hash browns.

Sprinkle hash browns with crumbled sausage or bacon.

Thoroughly mix together eggs, milk, salt, pepper, and dry mustard.

Pour mixture over the top of the meat and hash browns.

Top with grated cheddar cheese.

Refrigerate over night.

Cook at 350 ° for 45 minutes to 1 hour.

Easy Breakfast Casserole

Easy Breakfast Casserole -  Sprinkle hash browns, eggs, milk, salt, pepper, dry mustard, grated cheddar cheese

Ingredients:
  • 3 Tablespoons butter
  • 2 cups light cream
  • 3 Tablespoons grated onion
  • 2 packages frozen spinach (thawed and drained)
  • 1 pound fresh chopped mushrooms
  • 3 tablespoons grated Swiss cheese
  • 3 tablespoons flour
  • 2 teaspoons salt
  • ¼ teaspoon nutmeg
  • ¼ teaspoon white pepper
Directions:
Heat oven to 325° F.

Sauté onions and mushrooms in butter for 5 minutes.

Blend in flour, salt, pepper and nutmeg.

Gradually add cream, stirring to boiling point.

In buttered casserole dish, spread half the spinach over the bottom then top with half of the mushroom sauce, then repeat to make another layer.

Sprinkle with the grated cheese.

Set in pan of hot water.

Bake 40 minutes.

Serves 6.

Ingredients:
  • 2 cups grated Jarlsberg cheese
  • 2 cups mayonnaise
  • 2 cups grated onions

 

Directions:
Mix all the ingredients together thoroughly.

Spread evenly into the baking dish.

Bake at 375° uncovered for 20 minutes or until bubbly and surface is lightly brown.

This recipe is especially good if you bake it a day ahead of time.

Refrigerate and heat it up before serving for best results.

 

 

 

Jarlsberg Cheese Dip

Ultimate Jarlsberg Cheese Dip - mayonnaise, grated onions, baking dish

Ingredients:
  • 1 (14 oz.) can artichoke hearts (drained and chopped)
  • 1 (10 oz.) pkg. frozen chopped spinach (thawed, drained and squeezed dry)
  • 1 Cup grated Parmesan cheese
  • 2 (8 oz.) pkg. cream cheese (softened)
  • ½ Cup mayonnaise
  • 3 cloves garlic (minced)
  • 2 tbsp. lemon juice

 

Directions:
Preheat the oven to 375°F. Grease a 7-by 11-inch baking dish.

In a bowl, mix together the cream cheese and mayonnaise until smooth.

Mix in the artichoke hearts, spinach and Parmesan cheese.

Add garlic and lemon juice.

Spread evenly into the greased baking dish.

Bake covered for 20 minutes.

Remove the cover and let the dish bake uncovered for 5 more minutes, or until the surface is lightly browned.

Serve hot with tortilla chips.
