Potato Soup Base

Ingredients:
- 3 tablespoons butter
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 4 cups potatoes, peeled and cubed
- 2 cans (21 oz) cream of chicken or mushroom soup
- 2 soup cans milk
- Salt and pepper
Directions:
Melt butter in a large saucepan.
Add onions and garlic, cooking until soft.
Add potatoes and enough water to barely cover the potatoes.
Cook, covered, until potatoes are tender (15 to 20 minutes).
In a medium-sized bowl, mix together soup and milk.
Pour soup mixture into potato mixture and stir.
Heat but do not boil.
Season to taste.
Finish in any way you like. Add ham, or clams to make clam chowder, or corn and bacon to make corn chowder.

Baked Chicken Wings

Ingredients:
- ½ cup margarine, melted
- 1 tsp. dijon mustard
- 3 cups multi-grain flaked cereal
- 16-18 chicken wings, broken into two pieces
- ½ cup grated Parmesan cheese
- 4 tsp. finely chopped parsley
Directions:
Preheat oven to 350 °.
In glass pie plate, combine melted margarine and mustard.
In medium bowl, combine cereal crumbs, Parmesan cheese and parsley.
Spoon onto waxed paper.
Roll chicken pieces in margarine mixture, then in cereal mixture to coat completely.
Place on rack in baking pan; drizzle with remaining margarine mixture.
Bake 35-40 min., or until golden brown.

Apple Bread

Ingredients:
- 3 cups flour
- 2 cups sugar
- 1 teaspoon cinnamon
- 2 eggs
- 2 teaspoons vanilla
- 1 ¼ cups oil
- 2 apples, chopped
- 1 teaspoon salt
- 1 cup chopped nuts (optional)
- 1 teaspoon baking soda
Directions:
Preheat oven to 300 °.
In a large bowl, mix together all ingredients until well blended.
Only grease the bottoms of the loaf pans.
Pour batter into 2 greased loaf pans.
Bake for about 1 hour.
